Try this recipe:
1 qt. water 1/4 cup soy sauce 1/4 cup salt 1/4 cup sugar 2 Tbs. mustard seed 4 or 5 crumbled bay leaves Combine all ingredients, add bluefish fillets making sure to cover completely with mixture. Refrigerate at least 6 hours or overnight. Remove fillets from mixture and place on tray until tacky to the touch. Place in smoker or grill until desired texture and moisture content. You'll be surprised how it tastes,I also hate the taste of bluefish baked or fried but I can't get enough of it this way. |
