Default Blackfish Fishbake

Blackfish Fishbake

Ingredients

- 1-3 filets of blackfish(pending on portion)
- 1-2 dozen littleneck clams
- Bag of red potatoes
- Corn on the cob cut into threes
- Aluminum foil or small tray
- Lemon juice
- Whole lemons
- Sea salt
- Oregeno

First slice the potatoes into 4's I usually use about half a bag for a tray. Then boil up some water and add the corn and potatoes, boil for about 10 minutes to cook about halfway.

1) Season blackfish filets with a bit of sea salt and oregano.
2) Add a mixture of lemon juice and water to the bottom of the tray, just enough to cover the bottom of the tray (or aluminum foil if you are cooking for one.)
3)Add the littleneck clams, making a layer of clams on the bottom I use 1 dozen/ tray.
4)Lay blackfish filets on top of the clams.
5) Slice lemons into 4's, I will use 3 lemons per tray, squeeze lemons on top of the blackfish and then throw the squeezed lemon right into the tray.
6) Add boiled potatoes and corn on top of the blackfish
7) Sprinkle some whole pieces of sea salt on top of everything if you have it or add any other spice you like.
8) Cover everything up with aluminum foil.
9) Throw it on the grill on medium or high heat depending on your grill (make sure its nice and hot) Grill for about 15-20 minutes, when the blackfish is flakey white its done.

Serve hot and eat it up...try it and let me know.
