Default Orange glazed Cornish hens

Want to kick it up a notch

ORANGE GLAZED CORNISH HENS

2 HENS PERDUE HAS GOOD HENS THAT AREN'T FROZEN - DON'T USE
FROZEN HENS FOR THIS RECIPE

3/4 CUP SUGAR
1/4 cup WATER
1/2 STICK BUTTER
3/4 can CONCENTRATE FROZEN ORANGE JUICE
1 TIN 1/2 CATERING TIN
COARSE GARLIC POWDER
ONION POWDER
KOSHER SALT
COARSE PEPPER
PAPRIKA

CLEAN HENS AND DUST WITH SALT, PEPPER, GARLIC, PAPRIKA AND ONION POWDER.
PLACE 1/4 STICK OF BUTTER IN EACH HEN CAVITY THEN PLACE THE HENS BREAST DOWN
IN THE TIN.

BOIL 1/2 CUP OF WATER AND WHEN AT A FULL BOIL ADD 3/4 CUP OF SUGAR WHILE MIXING
AND CONTINUE TO RAPID BOIL AND MIX UNTIL MIXTURE STARTS TO THICKEN.
SHOULD BE ABOUT THE THICKNESS OF REAL MAPLE SYRUP. REDUCE HEAT TO LOW AND
ADD 1/2 CAN OF FROZEN ORANGE JUICE. TURN OFF HEAT
AND ADD TO COOKED MIXTURE. - SIR IT IN

COVER TIN WITH ALUMINUM FOIL AND PLACE ON A MED LOW HEAT GRILL ( 350 - 400 )
FOR Thirty MINUTES. AFTER TWENTY MINUTES REMOVE ALUMINUM FOIL FLIP HENS AND BASTE WITH
ORANGE GLAZE MIXTURE - ABOUT 1 CUP FOR TWO BIRDS. CONTINUE TO COOK UNCOVERED
WHILE BASTING EVERY 15 TO 20 MINUTES. TWO BIRDS COOK IN ABOUT 1 1/2 HOURS to 2 hours..
