*1 tbsn olive oil *2 cups finely chopped red onion *2 cups cubed peeled mango *1 cup chopped tomato *3 tbsn minced peeled fresh ginger *2 tbsp minced garlic (6 cloves) *1/2 cup lime juice *1/4 cup orange juice *1/4 cup dry sherry *3 tbsn brown sugar *3 tbsn white vinegar Preparation: Heat oil in large skillet over medium heat. Add onion; saute for 7 minutes. Add mango, tomato, ginger cook 5 minutes. Stir in remaining ingredients, bring to boil. Reduce heat and simmer 20 minutes. Cook bass on grill or broil, salt, pepper n olive oil. Enjoy |

![]() Has something similar last night but used a Mango-Peach salsa. Nice little kick to the sauce and blended nice with the taste of the fish ......
