changing efi to carb

i have a merc 225 efi looking to poss change back to a carb engine does anyone have suggestions or any input , the efi setup always seems to have electronic issues , figuring carb would be less headaches to diagnose fix or something to go wrong , i think its possible since same block but is it feasable ??

I'd seriously consider a new motor over that change over.
