Adjust time depending on the thickness of the fillets, I brought home some nice thick fillets this weekend from the Gambler. Picked up Oolong tea @ Wegmans but I am sure any black tea would do the same.

Most importantly - monitor the fish while cooking as it is easy to over cook. The broiler is used to caramelize the sugars (slightly) blackening the outside of the fish for a finish.

I baked my fillets for about 18 minutes in a convection oven and they were perfect.
