Hint for stuffing fluke

I don't know if anyone else does this but if you have a typically uneven thickness fluke fillet you can use a meat pounder to gently get it in shape for stuffing.

That's just a standard stuffing of canned crab, red pepper, scallions and Old Bay. Some Mayo and bread crumbs to hold it together. What's good is using skate in place of crab but they've been too small to fillet so far this year.

I always keep Trader Joe's Maryland Style Crab Cakes in my freezer as an alternative to preparing homemade stuffing. It's convenient and tastes great....just thaw, crumble and use as a stuffing for rolled fillets or top a filet for the grill or broiler.
