Smoker question
 
How long can properly smoked fish such as bluefish & striped bass be kept in the refrig before going bad ?

If you vaccum seal it well it will easily last 2 weeks in the refrigerator and easily 2 months in the freezer. I usually smoke herring and mackarell and they last easily for a month in the frige. As long as you cure the fish properly you shouldnt have a problem.

Thanks for the reply. I did some bluefish about 4 weeks ago & the remaining pieces became moldy. Apparently i tried to keep them to long.

The more you salt them the longer they last.

After brining it helps to air dry your fish before smoking, also the fresher the fish the better the results will be for both taste and longevity. I feel that it is best eaten between 7 & 10 days. If vacume sealed 2 month
is the longest. But I feel it starts to lose it's goodness after 1 month.
