Default Easy baked fish with onions and tomatoes

This one is so easy that anyone can do it. The recipe came from Wegmans to sell their basting oil but it has become one of my favorites.

Ingredients:
4 4 oz fillets of striped bass, sea bass, or any mild white fish
one onion
one tomato
Wegmans basting oil
salt and pepper

1. Cut up an onion, put in bottom of small baking dish or Corning Ware dish. Drizzle with a couple tablespoons of basting oil. Bake for 10 minutes at 350.
2. Cut up a tomato, put in dish on top of onions. Drizzle some more basting oil and cook for another 10 minutes.
3. Add fillets on top of tomatoes and onions, drizzle some more basting oil, put on some salt and pepper and cook for another 10 minutes at 350.

This is really easy and really tasty. One of my favorites. It even works if the fish has been in the freezer for a while and is not as fresh as it should be.

My wife did a variation of this last week. We were at our house in St. Michaels and didn't have Wegman's basting oil, so she mixed up some of the oil from sun-dried tomatoes with some olive oil, added chopped olives and the sundried tomatoes. It was even better.
