I had to stop watching b/c I was cringing at your technique. Any second I thought you were going to cut your finger off. Sorry but that is a terrible way to filet. NEVER cut toward your hand. Go on a party boat with an experienced mate if you want to learn how to filet a tog.
I still got the willies...

Electric knife.. the only way to go!!! A little difficult with small ling and porgies but for c-bass,tog etc, the only way to do lots quickly and a much nicer presentation of the fillet!!

I thought you came close a couple of times and grimaced...watch the mates on a head boat...I learned 90%-no, 99% about cleaning fish from them!!! And a couple of years ago, a second technique for loining tuna...Personally, I don't like a super sharp knife for skinning as I cut through the skin with a sharpy...any meat left next to skin is my dinner with wasabi & ginger that night...of course, only if there's one in the box...
Probably don't have the knife flat on the board while skinning-nice tip...thanks..
