If done right you can make a tuna salad out of it that is better than from the can if you enjoy that. gotta bleed them obviously and ice them. then fillet all the much darker center meat out (you are left with two 'loins' off each side). Poach them in a stock of onions, white wine, lemon juice, rosemary, thyme (whatever you want really how ever you like it, same way you'd cook bluefish to make imitation crab cakes out of if you've done that) after that you can flake it up and treat it like tuna from a can. make tuna salad out of it, mayo, celery, parsley, whatever you like.

You can't just take it an cook it and eat it like a white fish. they have the same bad rep as bluefish to some people haha.
