fish cakes with black seabass
cleaning up from a seabass trip an decided to keep the rib cage because there was so much meat. woundering how to cook it to seperate the meat from the bones an then make the cakes, ton's of meat so i don't want to waste it.any suggestions. thanks

I steam em in a shallow pan of 1/2 water and 1/2 white wine with a few garlic cloves in there
Or you can blanch them. Bring a pot of water to a good boil, turn off gas, drop in ribs, remove after 10 minutes of sitting in the hot water. The amount of rib meat is insane. It's a long tedious process but a great way to get some extra meat. I use this meat for my fish cakes. I have a recipie on here somewhere, try it.
