Default Local eats -- porgy, tomatoes and shishito peppers

Grilled a whole porgy the other nite over lump charcoal. Oiled her up with a twist of lime, salt and pepper. Prob a 3+ lb fish prior to dressing it out. Made a spicy thai vinegar/fish sauce-based lime chili sauce to top it with. It was epic.

Matched it with purple Cherokee and pink brandywine heirloom tomatoe salad from my garden and blistered coal roasted shishitos tossed in balsamic and good olive oil. Lightly dusted with parmesan... grew those too.

Porgies and home grown veg--cant beat it. Good livin' and good eats.

Sweet. That some good eats right there. Porgies get a bad wrap but they fight good and tase great

That preparation looks delicious! As you can see from my screen name, I appreciate both catching and eating porgies. Most folks have the mates just fillet their catch on the boat. That works well for a fish fry. However with the jumbos being caught this year, porgies taste best in my opinion cooked on the grill or broiler. It’s a bit of a pain to scale them, but well worth the effort IMHO.
