Ray Burke/Mad gaffer says that if you bleed the bluefish immediatly after catching, it helps a lot. Also another guy told me that when you fillet them, throw the fillets into a container of slightly salted water. A lot of oil comes out of the meat. Martin, the photos dont lie. Great looking dish

I've been doing this with my striper fillets just for something different along with making Striper Chowder and also Striper Salad (just like chicken salad).
I cut the fillets into bite size pieces, wrap with bacon, sprinkle on seafood seasoning and throw on the grill (on a non stick grilling pan) and while theyre grilling put a teaspoon of garlic butter on the top to melt in... YUMMY!!!! Larry Lawrence Caterers

You will not believe the amount of oil after a 10-15 minute soak. If you havent yet tried this and are a on the fence bluefish eater it is a must. For the record, I do not like bluefish in any form but would tear that bacon up!

Not for nothing... I would probably eat Caca if it were wrapped in bacon, as mentioned in past articles

I've done striper fillets wrapped in bacon on the grill. Use a very hot grill to crisp the bacon without over cooking the fillets. Watch for flare ups but the fillets are delicious.
