Default speed jigs

I watched an hour video of a 4 day Excel trip out of San Deigo. Guy recorded his efforts--was quite successful. He mostly jigged. I noticed, on everyone's jigs, the hooks on the speed jigs and others were all on the tail of the jig, not the head like they're shown in catalogs and come in the mail.
Are the left coast fishers changing things> I know before I first jigged I changed the hooks to the tail--caught 3 birds in rapid succession and mates told me the hooks were on the wrong end...now they're on the head end, as they come packaged.
Does it make a difference, even though both ways catch? Or should I not worry about it?

Also, I read that line should be tied to hook ring, not the jig. Any thoughts?
