Default Bluefish recipe, seriously

Caught a couple of big blues today and decided it's been awhile since I've kept a blue so I cooked it tonight. Given my wife is a health nut I greased a glass baking pan with coconut oil instead of butter. Put the usual salt,pepper, spices on the fish and baked on 450 for 25 minutes.
Unbelievable. Wife swears coconut oil pulls toxins or something but it seemed to pull the oil out of the fish and gave a light coconut flavor. Don't believe me try it. Trust me I'll be keeping more blues from here on.

If they are not to big, bled when caught, and kept on ice they are not that bad.
I like to cut out all the dark red meat and bake em on the grill in a mix of potatoes onions garlic tomatoes and some white wine.
