Ocean Pout Dijonnaise
Ocean Pout Dijonnaise
1 lb ocean pout fillets Freshly ground pepper Dijon mustard 1 "sleeve" (4 oz) Ritz crackers, crushed 3 Tbsp butter 3 Tbsp vegetable oil flour 1 egg, beaten 2 Tbsp milk Directions: Preheat oven to 450 degrees Score or pound fillets; cut into serving size pieces. Sprinkle fillets with pepper and spread one side of each fillet with mustard. Dip fish in flour, coating both sides and shaking off the excess. Combine the egg and milk in a shallow dish and dip fillets in it, then in crushed cracker crumbs. In a heavy skillet, heat oil and butter over medium high heat. Saute fillets quickly on both sides. Place sauteed fillets on a baking sheet, and place in a 450-degree oven for 4 minutes. Serve immediately. Makes 3 servings

Will say the receipt looked yummy. Just can't ever imagine putting one of them nasty looking critters in my cooler. 2010 and 2011, did multi day trips out of Montauk(4 day and 5 day trips). Fished not too far from the international line. Personally caught pout as long as my leg. Not fun reeling up in 700+ foot of water. Tight lines, |
