Default Striped Bass with Ramen Noodles

I know Ramen noodles give some of you horrible college flashbacks, but trust me, this is delicious!

Ingredients (serves four):

2 lbs. of striper fillet
2 3 oz. packages Top Ramen
1 medium yellow onion
2 carrots
3 celery stalks
5 or 6 garlic cloves
1/2 cup orange juice, or juice of 2 oranges
1/4 cup soy sauce
1 tablespoon hot sauce (if desired)
Ground black pepper to taste
Vegetable oil

Cut striper fillet into chunks. Mince garlic, and add orange juice, soy sauce, and hot sauce. Marinate striper in orange juice mixture for 2 to 4 hours.

Crush ramen noodles while still in package. Discard seasoning package. Boil noodles for 2-3 minutes or until tender. Drain and set aside.

Dice onion, and cut carrots and celery into thin strips (a peeler works well here). Coat bottom of a large frying pan with vegetable oil and heat on medium. Add onion, carrots, and celery. Saute for 10 minutes.

Add striper and orange juice mixture to pan. Cover and simmer for 15 minutes or until fish becomes flaky.

Break up fish in pan (do not mash) into smaller pieces. Add ramen noodles, cook an additional 1-2 minutes. Serve immediately.
