For fish: cut 4 filets in quarters(half if smaller),For pesto:chop basil in food prossesor about 2 cups leaves,5 garlic cloves, half cup xtra virgin and salt and pepper to taste.Toss fish with pesto lay out on baking sheet bake or grill for about 10-12 minutes.
For Bruscetta

ice 4 medium or 2 large Jersey tomatoes,one small red onion,chop one clove garlic,6-10 basil leaves,half cup xtra virgin oil,dash of red vinegar and salt and pepper to taste.Toss in bowl(best if done about an hr before use so flavors blend)
After fish is done spoon bruscetta over filets and enjoy something only our summers could produce.Simple but awsome!
