drum parm
ok so i heard drum taste like mud and i heard drum taste like veal, quite opposite ends, i knew the only way i'd find out da truth is to eat it myself. well tonight i made sum drum parmesan and it was OUT OF THIS WORLD!!
start by pouring a can of sauce into a glass baking pan and set it aside then taking your drum filet cut all da red out and then cut the filet down into smaller pieces. then try and thin those pieces down with your filet knife, kind of filet the filet so to speak. heat some veggie oil in da pan and give da drum an eggwash then a roll in seasoned bread crumbs and drop in the oil. cook til golden brown just like any other fish. take filets out dry on paper towels and move to baking pan put filets into sauce and spoon some sauce ontop of the fish as well cover in shredded moozerrall and put in oven @ 350 for 15 minutes. take out when cheese is melted and enjoy. it does not taste like fish at all, my aunt and my girlfriend said it tasted like "moist chicken parm". hope any of you who get some boomers can try this out, just remember only keep what you know you'll eat as theres alot of meat on these beasts so 1 or 2 is plenty for anyone, even me!!!!!

Re: drum parm
blk drum is without a doubt some good eatten fish, catch em all the time down this way. the cows range from 40-80 pounds most just take a pic and release since they are the breeders. and can at times have worms in em. But the best eatten size i normaly keep to eat is the 3-12# range. any unwanted cooked drum also makes good left overs to make drum/crab cakes, and freeze very well for down the road dinners.

Me too, came out pretty good. Thanks. The meat from the smaller Drum looked a whole lot better than the meat from the big fish 3 years ago.

Ah, but had you held on to your rod, instead of setting it in a rod holder the second fish might have been yours. I think it was nice of the dad's to let the boys catch the big fish. Well done Captain. ANdy wants me to book next year. I sent Capt. John an email asking him to pencil me in for June 11.
