Default Paella

The bride an I figured we would get rid of some frozen stuff from the freezer.

This is what we had - Blackfish, Scallops, Shrimp & Chorizo, from the

cupboard we had ,bay leaf, Chicken stock, onion, pinch of saffron,

dried parsley, oregano,paprika, S & P red pepper,1/2 jar roasted red peppers,

olive oil & a box of Spanish rice.

The picture is of what was left over.

After a few beer's I figured I would try posting a picture on my own, Without

Wilson's help.

If anyone is intrested in the recipe, let me know.

This is the way we made it the other nite. As you know there are many variations and other things you can add. This recipe is for four.

2-Tbs. olive oil
3 - cloves of garlic
2 - tsp.dried oregano
SALT & pepper to taste
1tsp.red pepper flakes
2 -cups of spanish rice
1 bay leaf
1 quart chicken broth -- I use low sodium if I'm using alot of seafood
1-onion chopped - i like spanish onion

Heat the olive oil in a large 10' fry pan or paella pan,(well worth the money)
add the onion,garlic, pepper flakes,oregano,bay leaf & salt & pepper. Saute for a few min. then add the rice, coat the rice w/ the olive oil then add the chicken stock.Bring it to a boil, the turn it down to a simmer for 20 min.

Then add shrimp, clams, scallops, firm fish cut into 1 in. cubes. Cover with lid or aluminum foil & simmer till seafood is done.


Some different variations: Chorizo (cook in onions & stuff in the first step)
Chichen ( again w/ the first step) Other things I have added are, saffron,chopped red and, (or) green pepper, chopped fresh parsley.
You can use uncooked short grain white rice in place of the spanish rice.

If any one has any other Paella or seafood Stew, I would sure like to see them.

Great recipe - I have some blackfish left and going to try it tomorrow during the blizzard MMMMMMM

Made it and man was it good - Really like Blackfishing too - you were all right about that one - cant wait to get out there again
