![]() I pulled out my cookbook yesterday and couldn't believe I never noticed the first recipe listed for striped bass.
I used the following ingredients: 1 fillet from about a 15lb striper 1 stick of butter 2 eggs 4 apples (cored) a bowl of flour with some salt/pepper a bowl of bread crumbs -Start 2 good size frying pans each with 1/2 stick of butter -When butter is ready put apple slices in one pan -roll chunks of fish in flour, dip in egg wash, roll in bread crumbs and put in butter in the other pan. When apples are browned and fish golden brown toss them on a plate together and eat! Believe it or not the flavors of striper and apples turned out to be complimentary. I usually fry fish in oil but frying in butter took out most of the guess work as if oil was hot enough and there was less splattering on the stove. |
