Thumbs up Jim's famous tuna marinade:

Since it's toona time......my buddy Jim is a chef.

2 cups vegetable oil

1 cup soy sauce

1/2 cup cooking sherry

1/4 cup fish sauce (asian food mart, smells like crap)

4 cloves minced garlic (1/2 bulb)

4 chopped scallions

Lay steaks on side in a large zip-lock bag, add marinade, turn every half hour for 2 to 3 hours

Grill 6 to 8 minutes on each side depending on thickness

This one is a keeper, it'll knock your socks off !!!

Just writing down what he scribbled on some paper, he grills the tuna steak and it has that criss-cross marking on it, then he presses on the tuna to check to see how well it's cooked.

If you have a vacume sealer you can put the fish and marinade in one of those bags and do a suck and seal. Saves turning it over.

I also like to cut my steaks thicker and grill them on the edges only.

It makes it easy to see how done they are without guessing or the press test.
