![]() Tuna are Biting! We had some good action on our Saturday night Canyon trip. It did not take too long before a 100 lb swordfish hit the deck when we started fishing during the night. We read fish passing under the boat from time to time but the bite did not turn on until sunrise. At sunrise there were big readings of yellowfin and longfin schooling under the boat. Erik Bogan got the party started when he hooked into a 60 lb long fin. There was another quick hookup on bait after his fish took the jig and other fish followed it towards the boat. We continue to pick with shots of fish after that for a couple of hours. Yellow fin and long fin were caught on either bait or jigs. Both butterfish and sardine produced bites. Before we headed in We had time to make several stops for mahi-mahi and had good action with them. a few passengers were able to drop to the bottom when there was a short lull in the action and catch some tilefish. The famous Capt. Ron made his first tuna trip of the season aboard the Jamaica, just in time for the bite to begin. He landed a 50 lb tuna, five mahi-mahi, and four tilefish. ![]() Longfin have a much paler, softer, milder flesh. Best if eaten within a few days of catching esp if going the sushi/sashimi route. It also makes a phenomenal tuna salad when grilled or pan cooked through completely. Let it cool, flake with a fork, add mayo, shallots, celery and some sambal olek (garlic chili paste). That'll stay a few extra days cold in the fridge but mine rarely lasts 2 days.
Weve had trips where we came home with 16-20 longfins and canned a ton of it. That lasts a yr on the shelf in a cool dark storage area. Longfin and skip jack are prob the lightest in flavor. Followed by yellowfin, then bigeye. Bluefin holds the "strongest" flavor and is most ideally eaten raw.

If done properly, frozen then thawed is not a huge difference....imo But thx that does answer my Q
