Miss Belmar Princess Mackerel Salad

4-5 Medium Mackerel Filleted, skinned boned, dark meat removed
3-4 Tablespoons Mayonnaise
2 Tablespoons sweet relish
½ tsp Salt
3 Quarts Water

Bring 3 quarts of water to boil, add salt and fish
Bring back to a boil and remove fish with slotted spoon
Place fish in glass bowl to cool
When cool add Mayo, relish and mix like tuna, salt to taste

Serve on your favorite fresh bread. Pumpernickel or Rye does the trick.
