I like to cook but my baking ain't too bad either.

Jumbo Blueberry Muffins
This receipe will make 12 jumbo muffins
6 cups blueberries
4 1/2 cups all purpose flour
2 1/4 cups sugar
1 1/2 tes salt
6 tes baking powder
1 cup veg oil
3 eggs
1 cup milk
3 tes van extract
- dry mix flour, sugar, salt and baking soda.
- take 1/3 cup veg oil and pour into 1 cup measure then
add 1 egg and fill the rest with milk - do this three times
and add van extract. Mix with beater then put beater away.
- Mix wet and dry mixture with wooden spoon.
- fold in blueberries and do not over mix
- place mixed batter into 12 jumbo muffin cups, I use paper
placed in big muffin tins after spraying pam lightly.

Muffin topping

2/3 cup brown sugar
1/4 cup flour
1 tes cinnamon
2 tabl frozen butter

- mix above with processor or with fork to cut in the frozen
- top miffins lightly with above mixture

BAKE AT 355 DEGREE PRE HEATED OVEN FOR
APROX 35 MINUTES then raise heat to 400 and
cook for an additional 10 test with tooth pick for
completion.
