Hey Cat. Been going down to OBX the last dozen years with the family.
On your way up to Corolla, stop off at Bob's B&T in Duck. You can put your name on a list for shared charters there. Usually the boats they deal with leave from either Pirates Cove or Wanchese.
You can do anything from an inshore trip to a full day offshore troll. I would recommend doing a 1/2 and 1/2. You will bottom fish in the AM and troll in the PM. The bottom fishing has always been lights out for us in both July and August. Mainly blueline tiles but some grouper in the mix. Great eating too.
The afternoon troll has always been tough for us on the billfish, but the mahi never disappoint. Once they find a weedline its game on. We always go back to the house with plenty of fish to cook. All the marinas offer a fish cleaning service for a reasonable fee. Very professionally done.
The inshore/back back/surf fishing flat out sucks that time of year. Small croaker, pompano, shark, blues, flounder. Occasionally you'll luck into a decent redfish. Night time is the only option that time of year, water is really warm.
If you have young kids, take them to the beach after dark. The place is crawling with ghost crabs and they have an absolute ball catching them in nets and buckets.
