Beer Battered Fish Tacos

2 - 3 cups Vegetable oil, for frying

1 cup all-purpose flour

1 Can or bottle Beer (12 oz.)

Ortega Soft Taco kit -- includes 10 Flour, soft tortillas, 1 packet (1.25 ounces) taco seasoning mix, and 1 packet and 1 packet (3 oz.) taco sauce.

1 Pound firm white fish, cut into pieces. (I only had small bag of Seabass Fillets so I also peeled, cleaned and cooked some shrimp too.)

Heat oil to 375 F. in medium saucepan or deep fryer.

Combine flour, beer, seasoning mix and taco sauce from soft taco kit in large bowl; mix well. Let mixture stand for 5 minutes.

Dip fish, in batches, into batter and carefully place in hot oil. Cook 4 minutes or until golden brown, turning once. Remove with slotted spoon. Drain on paper towels. Repeat until you run out of fish. Being careful to keep oil at 375.

Place cooked fish on tortillas and garnish with Smokin' Chipotle Coleslaw.

Smokin' Chipotle Coleslaw:

1 bag (16 ounces) coleslaw mix.

1 packet (1.25 ounces) Ortega Chipotle Seasoning Mix. (I found this at Target)

1 cup Mayonnaise.

1/2 cup Salsa

Salt to taste.

Toss coleslaw mix and seasoning mix in large bowel. Fold in mayonnaise and salsa until well combined.

When Tacos are ready, call me & I will come over to sample to make sure you did it right.
