Instant Codfish Judith Ann
Codfish over baby spinach with roasted red pepper and tomato puree
This meal take about 4 minutes to make. Put this together last minute with whatever Judith Dear had in the fridge and cabinet. Came out really good. Almost looks and tastes gourmet.
Ingredients
1/2 lb cod loin
1/2 cup roasted red pepper and tomato soup
1 small bag baby spinach
2 pats butter or margarine
salt and pepper
Directions
Steam cod in a microwave safe container for 2 minutes
steam spinach for 2-3 minutes in microwave safe container
Heat 1/2 cup of roasted red pepper/tomato soup
Drain spinach and place on plate
Place drained cod on top of spinach
Top with soup butter and salt and pepper to taste
Enjoy!
