Wahoo cooking question

We were lucky enough to land a really nice Wahoo yesterday offshore. I have 4 nice steaks home and I was wondering if anyone had any recommendations on how to prepare it. I hear it's very good eating but I've never had it before. Thanks

Pat the fish dry, olive oil, rock salt and fresh cracked pepper
Oil a hot clean grill and toss em on.
Flip once, serve.
Simple is best. You want to taste the fish not a ton of spices.
The fish is a bit oily by nature so its great on the grill.

I usually use NJ Dave's advise and serve over raw spinach with a roasted red pepper and nj sweet corn salsa.

Try this one.. I use this recipe from my cousins chef school experience.
Take a steak and smear it on one side with polish deli mustard (Kosciusko brand) and press chopped fresh Italian parsley and celantro or basil if you don't like the celantro.
Get frying pan hot add some olive oil and fry for 2-3 minutes on each side of a 3/4" steak.
Sound crazy but it's crazy good. Work great on yellowfin tuna also.
Enjoy your Hoo..
