Fish Tacos
 
Fish Tacos

1. 1or 2 lbs. fluke filets
2. 3 ripe tomatoes
3. 2 avocados
4. 1 small red onion
5. Fresh cilantro
6. 2 limes
7. 2 tablespoons olive oil
8. 2 eggs
9. 2 cups of seasoned breadcrumbs
10. Salt n pepper





I've been making this all summer with Fluke but any white fish will do. (Cod, Sea Bass etc..) First, in a glass bowl dice up a few ripe tomatoes and 2 avocados . Add some minced red onion, cilantro, the juice of 1 lime and some salt and pepper to taste. Mix it all together and put it aside. For the fish you can either bread and fry the filets or saute them in olive oil with some smoked Paprika or do both like I do. After your done with the fish set it aside on some paper towel if frying. Now get your soft taco and heat it in a dry frying pan. Then you can mix some hot sauce and mayo together and smear it on the warm tortilla.Place your fish in first then some of the tomato/ avacado mixture. Then for a little crunch you can put some shredded cabbage on top. Some stores sell it already shredded. It beats chopping it yourself. Then squeeze a little more lime juice and finish it with cilantro and you have a delicious fish taco. I hope you all enjoy this .
