Baked Cod with tomato

Baked Cod with tomato

Ingredients

1/2 lb Cod Fillet
3 slices of tomato
2 Tbsp Olive Oil
2 Tbsp Butter
Non-stick spray
1/4 cup Itallian Bread Crumbs
Dash of salt
Dash of pepper
1/4 tsp parsley flakes
Lemon wedge

Heat oven to 400 degrees

1) Spray small oven safe baking dish with Non-stick spray
2) Place rinsed fish in dish and coat with olive oil, bread crumbs and tomato
3) Pat with butter and sprinkle with parsley flakes
4) Bake at 400 degrees for 12-15minutes till fish flakes easily

Sounds good less the flavored bread crumbs, ( just my dislike ) Going to give it a try still have a lot of cod in the freezer.

Richie, funny you mentioned that. My dad always used those plain bread crumbs, a little milk and it was tasty. Try it both ways. Either way.........

Cod is King.

Something about a Cod meal..... better than anything.

Been meaning to try this for a while and today it was possible. First time my wife ever fought over the last piece. of fish. Gonna try it with Striper and Fluke cause using Cod is great, just Sacriligious.(sp.):)
