Black Sea Bass Ceviche
I figure now that the Sea Bass are making their appearance back on the inshore wrecks, this would be a good time to share this recipe I got from my friend and legendary wreck fisherman Capt. Bravo.
Ingredients: 2 lb. Black Sea Bass Fillet - Cubed (bite size) 6 Limes 1 Red Onion - Finely Diced 1 Tomato - Seeded & Chopped 1 habenero pepper - finely diced Citantro - chopped 1 Avocado - chopped Salt & Peper Tobasco Method: In a noncorrosive dish (do not use metal), place the Sea Bass, onion, tomato, habenero, & cilantro. Squeeze the lime juice over ingredients. Let sit in fridge stirring occasionaly. Remove from fridge, add avocado, salt & pepper to taste, & add a dash of tobasco. Stir again and serve with tortilla chips |

Is the non-corrosive dish so that the Tobasco and Habenaro don't "eat" through the metal????:p
Gonna need a couple of Guiness Stouts to wash that down!!!;) |

Thanks for all the positive remarks guys...And yes, you might need a few extra beverages to put out the habanero fire!

Sally, I'm glad you liked it. Scoop chips is the way to go and don't forget the ice cold beer for the habanero fire! Tell Ken he's no longer the black cloud!

Made this over the weekend, but used jalapeņo peppers instead of the habenero's.....decided this when the sign on the habenero's said 20X hotter than the jalapeņos......outstanding appetizer sitting on the deck with a cold one!
