if your talking about black drum , down here in fl, alot of people will just cook it on a grill with the scales still on in facing down, they call it drum on the half shell. another way you can just take skin off i put little olive oil on it bake in oven 325. season some cajaun fish spice brush on some butter couple mins befor done. they also make excellent drum cake's make same way as maryland crab cakes but with black drum they are killer!:) just caught my self few 8 pounders along with a 7# red drum, and pompano in the surf today so doing a big cookout this weekend.

I've been told that some drum will have worms or parasites in them that can be seen.

Has anyone seen this? Can they be cut out like some cod worms?

The worms I have seen were in the tail section, easily trimmed off. As far as cooking, I have cooked the rib sections with barbecue sauce. Very tasty, and the ribs were easy to pick up and chew the meat off!

Yes Drum can have worms and I would just cut that section on meat out. I am going to try the Idea of drum cakes with one and with the other I am going to try the cajaun spice. Thanks for the info.

I would cook it on a cedar board with any spices that you like, when it's done throw out the fish, and eat the board. i use the same recipie for bluefish
