Tuna Burgers
 
I use the tails of the loins(1-2") & various chunks from steaking.

1 lb. tuna*

1/2 cup seasoned bread crumbs

1/3 cup each of chopped celery, onion & carrots

1 large egg

1/3-1/2 cup mayonnaise

2-3 tbsp. Old Bay seasoning

2-3 tbsp. lemon/lime juice

*2 cans Albacore tuna or fresh caught, boiled, then ground (I use an old hand crank grinder with the medium grind blade).

Sauté celery, onion & carrot on medium high heat 'til soft.

Combine tuna, bread crumbs, celery, onion, carrot & egg. In a separate bowl blend the mayonnaise, Old Bay & lemon/lime juice. then stir into first mixture until fully mixed.

Hand form into 1" thick patties, fry in oil 'til heated through and browned on both sides. (optional) Add slice of cheese(your choice) to top of burger to melt. Serve on bun or as is with whatever else you want.

If you have access to fresh bluefin (and proper food handling skills lol) I bet you can make these with raw ground and serve it medium rare. Problem is getting the right texture on the grind...probably would have to dice/chop by hand!

Bluefin is my favorite---wouldn't think of using it for a burger, it's just too good(my opinion)! Actually, one could use any fish for these---my next batch will be Mahi and Greek lo-fat yogurt instead of mayo.....

Just used some mahi-mahi for the recipe--very good. I'm thinking you can use any fish...Also used Greek yogurt instead of mayo...had to double the amount and double the egg count---yogurt isn't as binding as mayo so the added egg(s) compensate...froze patties, then vacuum sealed...

Agreed. Just slice bluefin and eat its that simple. These burgers sound good and will have to try soon. Thanks for sharing
