Never had good luck freezing ling. They come out like a wet sponge even using food saver machine. Any advice?? Got a bunch to freeze today.

Strong salt water rinse, dry the filets with paper towels, then vacuum pack and freeze. Has worked well for me, but no, it's not the best freezing fish.

Bread them like you would before you fry them, lay them on a cookie sheet and freeze them just til they are solid. Once they are solid vacuum seal them.

If you eat them fried then fry them before freezing. Reheat in oven or toaster oven and they come out 90% as good as when they came out of the oil. DO NOT MICROWAVE!

You can also save i/2 gallon oj or milk cartons, fill with water and then put a couple of fillets in.

Egg them, bread them, fry them up, THEN freeze them after they cool.

Freeze in a water and salt solution prior to vacuum packing.
