After seeing the food and chefs cooking for the students in the U Mass dining hall no wonder why our millennials have a hard time dealing with real life.
I have not tried dogfish before because I am too busy targeting better table fare, but this year I will make it a point to do so.

Good article .. They love horn dog over in Europe, [salmonette] as well as Sea Robins, [Gurnard] Skate,
[Meuniere] and they would probably LOVE Pout as well.. So why not sell all those creepy looking bastards to European markets. and keep the Cod ,Hake,Flounder, Tog, Sea Bass, for sportsmen? Hell, we are over run with dogs most years, they can have them all, FREE! Win /Win..They get meat to sell, we get rid of a pain in the ass that grabs expensive bait, and eats Cod and ling... bob

I have not tried dogfish before because I am too busy targeting better table fare, but this year I will make it a point to do so.
Not sure how its done, but they need to be cleaned in some manner as soon as caught from what I understand...I know guys that have kept them iced, and still they tasted like ammonia upon cooking... Some guys here know how to do it I'm sure.... bob

From what I heard they piss thru their skin and a strong urea taste will be present if they are not cleaned properly when first caught.
Hell I ate skate before and liked it. :)

Most sharks pass urea through their skin when they die and if not cleaned immediately they'll have a foul taste in the meat. From what I understand it's not poisonous to humans but it will effectively make the meat inedible. Sounds like dogfish are no different in that respect. Makos for some reason don't have the same issue but with any shark I've always been told it's best to clean the stomach cavity as soon as possible after the fish is caught.

They aren't filleting them right away in the video. There is only one way to find out. Take one home fillet and try it.

There are 2 types of shark, those that excrete urea through their skin (blue sharks among others) and those with a bladder that collects urea and excretes it through the urine, like makos, porbeagles and threshers. The ones with the bladder are edible, those without will have ammonia in their flesh. They're edible if you like to eat ammonia.

I've caught, bled, gutted and saltwater ice slurried doggies before. Patted dry and brined in Apple cider, sea salt, and a variety of spice. Then beer battered and deep fried. It tasted AWFUL. If something needs to be prepped that much to make it remotely palatable no thank you.
Give me sea robin tails or cunner, even a big sundial. I'll happily eat them. No more bow wows for me. Grosssss lol

Thats about what I figured, but they love the damn things in the UK, and have been eating them for centuries.. Maybe they know something we don't??
Tell you what , since you mentioned cunners and sundials.. Wish I could catch a lot of big ones like I used to.. Bergals are sweet and white fleshed, and although the fillets are thin, I like sundials much better than fluke.. To me they are as good as winter flounder... bob

Cunner taste better than blackfish. I happily keep them when out cod and tog fishing out east. As for sundials, phenomenal sashimi. I get them off the jetties in Montauk on spoons and small tins still. Not as plentiful as when I was younger but they're still there in the sandy areas. That top fillet on a 14" is worth the time for quality sashimi.
But again, no dogs for me. If there's a secret to it then I'm clearly in the dark on what it is.

I have eaten dogfish before and it was pretty good. Have to kill em and clean them right away then throw on ice or else you will get a ammonia smell/taste since they pee thru their skin. I killed them then gutted and de-headed them right away. But they really are not much fun to catch. They dont fight very well, more like dead weight.

I just did research on sharks. Mako, White, Porbeagle and Thresher make up the family of Mackerel sharks. Of these, the Thresher and Mako are the only sharks with a bladder. Every other shark, regardless of which family they are in secrete urine which is converted into urea, then passed through the meat and out through the skin. I was told some 65 years ago that shark up to 3' was edible. The man gave me 4 steaks-2 of cod & 2 sand shark- cooked them together in the same pan with same seasoning, couldn't tell the difference, the one from the other. I heard several years ago, the Brits were over here taking spiny dogs for their Fish 'n Chips over there. Heard the same about Arthur Treacher's back then.
Mako and Thresher are the only sharks I'd eat. Just sayin'.....To each his own, but then I'll only eat bluefish marinated for 24 hrs and smoked unless they're "cocktails".

Very informative but we need to get the ball rolling and stop bringing imported fish. Eat LOCALY caught fish which is good for the USA and healthy for us too!

Very informative but we need to get the ball rolling and stop bringing imported fish. Eat LOCALY caught fish which is good for the USA and healthy for us too!

Be careful what you ask for, that's a very slippery slope. Consuming more domestically caught fish will result in added pressure on domestic stocks which recreational anglers are barely holding on to their share of the quota as is. What impact will that have on fisheries in general if you increase the overall harvest and where do you think the incremental commercial quota will come from?

Thats basically what I was saying. Don't get me wrong I am not saying to end all commercial fishing. I mean I like to have a seafood dinner at a restaurant some times. But I will not order flounder because it may be locally caught fluke. Or any other fish that I think may have been caught locally. In my opinion commercial over fishing is the real problem...Charlie
