First someone must catch the flukes! You need 2 fillets per person.
Take fluke fillets flour, egg, panko, and fry in vegetable oil till golden brown then set aside.
Melt Half stick butter in fry pan with 1/4 cup olive oil , half lemon squeezed. Heat on high add one cup white wine and reduce to half. Turn off and add capers.
Other ingredients:
Thin slices Jersey tomato, slices of fresh mozzarella, fresh basil leaves, balsamic vinegar, half a lemon, Salt, pepper.
Take one browned fillet, stack mozzarella, tomato, basil sprinkle with balsamic vinegar and stack on bottom fillet. Top with other fillet, salt and pepper to taste. Squeeze half lemon on top. Bake at 375 degrees for 20 minutes or until cheese melts.
Move to platter and pour white wine mixture over fillets.
