considering striper season is coming up fast and we are about to catch those big boys here is my personal recipe that i have been cooking for a while now and everyone I know loves it! enjoy and good luck on those spring fat asses!
Captain Kb's Striper Cakes
Ingredients:
1 striped bass around 28-35"
2 eggs
1/2 cup mayo
2 tsp garlic powder
2 tsp old bay
1 tsp pepper
1 tsp salt
3 pinches of fresh romano cheese
1/2 large sweet onion- minced straind
1 1/2 red pepper- minced straind
1 tsp apple cider vinegar
2 tsp worcestershire sauce
1 fresh lemon juiced
5 cloves garlic- minced
Instructions:
Salt, pepper, and italiain seasonings the fish.
Squeezed juice of 1 fresh lemon onto fish filets.
Cut lemon into 8 chunks and lay face down on fish.
Put in foil packet sealed tightly and steam in oven.
425 degrees for 30 minutes. Fish will flake easily.
Mix all ingredients except fish. Wisk thoroughly.
Add fish and fold.
Add bread crumbs ONLY if necessary!!(so drain any juices you can!!)
Put in the refrigerator covered for 2 hours.
Form cakes on greased cookie sheet and sprinkle old bay on top
Broil in oven until nicely brown.
When broiled drizzle with remuloude sauce for dipping.
Enjoy!!
