.....This is more of a spread than dip.....
1 pound smoked fish: bluefish, tuna or other
8oz cream cheese at room temperature
3-4 tblspn mayonnaise
3 tblspn horseradish
Juice of 1 lemon or lime
1-2 tblspn worcestershire sauce
1 medium onion, well chopped
1 bell pepper, well chopped(**)
few dashes soy sauce
1/4-1/2 tsp cayenne pepper (to taste)
salt to taste
(Adjust amounts to taste)
chop fish in food processor
mix all ingredients together
chill before serving
Marinated fish works without smoking but must be cooked, then dried for 1 hour in oven @ 150-170* or in a smoker without smoke.
(**)I use red, yellow, orange, green peppers or a combination for color.
