Poached Gambler Cod w/drawn butter
Cod is one of my favorite fish. It makes a great Chowder and it is great Fried, Poached and Broiled.
When it is fresh I like it simply poached with melted butter.
2lbs Cod Fillet
4 med red potatoes
1 tbsp Salt
Fresh ground pepper
1 stick Butter(margarine is fine and you don't have to use the whole stick)
3 quarts water
1)In Sauce pan bring 3 quarts of water to boil, add salt
2)Place Cod in water and bring back to a boil. lower heat and simmer 5 minutes until done.
3)Place washed potatoes on paper towels, poke with fork and microwave utill soft, set aside
4)In a microwave proof bowl, melt butter in microwave
5)When fish is cooked through remove from water with slotted spoon and place on plate, add potatoes, serve with corn or favorite green leafy vegetables.(broccoli rabe, chopped Kale, ect.)
6)Drizzle melted butter over Cod and add pepper
