Don't know how to cook your trout?
Here is an easy way to make a MEAL out of a stringer of state stocked trout.
Grilled Trout Hash
Ingredients:
-2 Stockie trout skin on, guts removed and cleaned.
-3 Potatoes (I use red or Idaho gold)
-1/2 onion
-1/2 Lemon
-Spices, 1/2 teaspoon each (Salt, Pepper, paprika, garlic powder, chili powder, oregano, dried dill-optional )
Rub trout generously with olive oil, salt and pepper.
Turn backyard grill on med-high.
Grill trout directly on grill grate for 5-6 min/side (10-12m total) or until trout is cooked through, firm, and not mushy.
Let cool. Pull off remaining skin and discard. Remove meat and save in a bowl.
Chop potatoes (wash and leave skin on) and onions into 1" hash pieces.
In Large skillet (cast iron preferred), turn on medium heat, add 1/4 stick butter- cook potatoes & onions for about 12 minutes or until almost fully cooked.
Add Trout meat, spices, and squeeze lemon into mixture. Cook for 2 minutes on High or until crispy.
Serve. I add hot sauce to mine.
**If you smoke trout like me, substitute smoked trout for grilled trout.
