Okay. Here`s a new spin on an old recipe. (Black fish Parmesan) Season fillets with salt, pepper,garlic powder,onion powder,little cayenne pepper and coat with seasoned bread crumbs. Brown fillets in light olive oil over medium high heat and remove from pan. Make a marinara sauce in the same pan or use a pre made sauce in a pinch. Place fillets back in the pan cover with a little sauce and mozzarella over the top. Finish off by broiling the dish until the cheese melts and it`s slightly browned. Delicious!
(Black fish francaise with capers). Coat fillets in seasoned flour and dredge through an egg wash. Brown fillets in a 60/40 butter to veg oil mix. Once fillets are browned on both sides, add 1 1/2 to 2 cups of white wine, juice from one lemon and capers. Cook down the liquid to half occasionally spooning the liquid over the fillets. Ridiculously Good ! Bon appetit!

I done ear fish :D but here's mine.
A sliding hook rig, one 8oz sinker and 2 halves of a 3 inch white legged legs on :D

start by squeezing lemon juice over bare filet and broil, once near done add cheese mix to top of filet and cont to broil till cheese mix turns golden. add panko crumbs to top if you want a crunch

cheese mix---- in a bowl place 1/4 cup grated cheese, 2 table spoons melted butter, 2 table spoons mayo, hot sauce to taste, mix all together add more cheese if too loose.

sooooooo good! works on chicken also...

Nice! Sounds delicious. Definitely going to give it a shot.... Joey, yours sounds like recipe for success. lol
