Too cold to fish so might as well hone my baking skills. Old tme classic
which everyone enjoys. The Rum is a must. :)

Pineapple upside down cake
1 box Duncon Hines Pineapple Supreme cake mix
1 20 oz can of Dole Pineapple slices in 100% pineapple juice
3 lg eggs
1/3 cup water
1 cup pineapple juice - drain the can of slices and use this juice
1/3 cup veg oil
1 jigger pineapple rum
1 small jar of Maraschino cherries
1 stick unsalted butter
1 cup brown sugar packed
. melt butter then stir in 1 cup of brown sugar
. cover bottom of 9 x 13 inch pan with above mixture
. place pineapple slices on top of sugar mixture
. place cherries in holes of the pineapple slices
- mix cake mix with pineapple juice / water / eggs /veg shorting
pineapple rum then pour into the pan
bake in 340 degree pre-heated oven for aprox 55 minutes - testing with tooth pick
flip over into larger tin while still warm
