On tues I was out on a fluke trip and the boat did quite well. Needless to say I have a bunch of filetes.
So far I seasoned and grilled em in an aluminum tent with mixed veggies and white wine,
Old fashion breaded and fried,
And made some quick fish cakes.

With a few filets left someone please let me know how I should prepare em.

Dave I just posted a fluke ceviche recipe that is pretty good. Another recipe I've used is to bake the filets with a butter/white wine sauce that i make on the stove.

First I season the filets with salt, pepper, and lemon juice. Place them in a pyrex baking dish.
On the stove melt some butter and add fresh garlic. Let the garlic cook for a few minutes and add white wine. Bring to a boil to let some of the alcohol cook off of the wine. I like to add grape tomatoes, jalapenos, fresh herbs, cilantro, thinly sliced lemon slices to the saucepan. Once the sauce is ready i pour it over the fish and bake at 350. I also like to sprinkle capers and more fresh herbs over the filets before baking.

I feel that the fluke is a little too delicate for the high temperature of the grill and that baking in the over preserves some of the moisture and juciness of the delicate fluke fillets.

Sounds good. I'll try this for lunch tomorrow.
With all these guys who post all these flike pics I figured there would have been some good dishes share.
I have a good fish cake recepie ill send you. A lot of work but its really good.

My favorite Fluke sang-wich

Take fillets - salt - pepper - garlic powder to taste - fry in a little butter real quick 2 minutes per side pending on thickness. Simple

Now here is the key - Portuguese rolls with white american cheese . On the roll either mayo,horse-radsih, tarter sauce or all three or none . Your choice

The key to this is the portuguese rolls and white american cheese - I have tried different rolls and cheeses and not the same -


Fluke - Garlic-White wine w/lemon
In a pan - low heat - Salt - pepper - chop up some fresh garlic and place on fillets - sprinkle lemon juice over the fillets or half a fresh lemon sliced and squeezed over them - some butter and white wine
Cover for a couple of minutes ( depending on the thickness of your fillets ) and steam them up just like the grill . Just before your done - sprinkle some more white wine - done

The best fluke francaise recipe I ever had is unfortunately not mine but can be found on you tube under summer sautéed fluke francaise by daddy jacks. You will hear his dog barking in the background(pretty funny)
