I was out on the fishermen this week for a striper trip monday night. Unfortunately only came up with a short bass but did end up with a cooler full of croakers and porgy. Never had croakers before so I wasn't sure what to do with them. I decided to try a recipe for fish cakes with a few variations of my own. they turned out really good. here's the recipe:
Season fillets with salt, pepper, lemon
Bake filets at 350 with butter, garlic, scallions, parsley, white wine and lemon juice - (you can bake it any way you want this was just something i was comfortable with.)
Flake fish (should be about 3 cups of meat)
Mix flaked fish with:
3 tablespoons of mayo,
1.5 tablespoons of whole grain mustard,
a few dashes of worschester,
Half of a diced jalapeno,
Fresh chopped herbs and scallions (i used parsley and cilantro)
Teaspoon of old bay,
3 tablespoons of lemon pepper panko bread crumbs,
Juice from half a lemon
Next time I will add 1 egg to hold it together a little better
Cook each side in a pan with a little bit of butter until brown
I dipped mine in some wasabi mayo. Give it a shot let me know if you like it!!! Would have posted a pic, but don't think a picture gives justice to just how good these were. Can't wait to load up on croakers again.
