I found a local fish market that is willing to save salmon bellies for me that I pick up on Saturday or Sunday. I picked up a decent amount yesterday and without really thinking, I placed them in my chest freezer without salting them down. My question is, can I defrost them, apply salt (Kosher) and re-freeze them or since they've already been frozen will they be 'mush' after I defrost, salt & re-freeze?

Same store also sells what appears to be local & fresh spearing for $3.99/pound.

You can def try. I haven't had good luck doing that to clams.

defrost it in salt water, ice, and a crap load of kosher salt, it will toughen it up and thaw slowly, then refreeze.
