i think they taste pretty good..

I usually TKO the dogfish asap and gut it as soon as it comes over the rail..
Cut into steaks.. then wrap in foil with butter, garlic, salt, pepper, lemon, and Old Bay seasoning.. Put it on the grill and enjoy!

I tried giving it to people a few times and they didn't like it. It has an ammonia taste they told me, that may mean I should have bled them right away idk? Also if that is that master chefs signature dish....he better retire, that wouldnt fly in any new restaurant.lol is he teaching you how cook onions or fish:D

Joey If you decide to try it again, the next time when you get it eviscerate it as soon as you get it in the boat. Remove the head and ice it down.

Yea.. Tasted like that because they pee through their skin.. Need to kill it asap and removed the guts and bleed it out.. Then give it a quick rise.. then cut it into streaks... and the the key is the Old Bay seasoning.. It really gives it a great deep taste..

Actually, there's another chef secret to taking out the ammonia taste and the uric acids. Bleed the fish immediately, cut off the fins and spines ASAP if keeping, and take a little extra under the spine to get the glands. After cleaning the fish, freeze or refrigerate as you would like...

Here is the important part:
MARINATE IN A CITRUS JUICE.
I have done it in something as basic as orange juice or as advanced as a lemon-tequila-lime marinade.

One I would definitely recommend is 2 fillets of dogfish marinated in orange juice for about an hour. Then, use a beer batter recipe with a belgian wheat, like Blue Moon.

I've done this before for people and they thought it was fresh catfish.

PA Monger has the right idea as others have stated you have to clean them thoroughly when you catch them and get them on ice. If I am going to eat them they get gutted, finned and skinned right away. I then cut them into one inch hunks and dip them in egg, bisquick or flour and then Italian bread crums. Deep fry until crisp and make up a good cocktail sauce and you are good to go. Problem is it always seems you catch one in the middle of a great drift for fluke and I don't want to go through all that at the time. They are very good to eat if prepped properly and when you get fish and chips in ZEngland often times you are getting DF.
