Got to jump on as a stand in on the Monger yesterday, wanted to smoke my fillets, but got talked into using the ribs instead.
made a batch today and have to say it def was AWESOME , and a good way to use that extra bit of meat that normally gets thrown away , and having the fillets for other meals
good thing you do have to pick through all the bones or these would be eatin already

Good deal! , might I recommend the smoked fish dip.
It is always a favorite w my groups .

Dan you ever try smoking pout? I was skeptical at first but my buddy just got a killer digital smoker and tried Tog fillets and ribs.. amazing
But then he offered up some pout, I was sold on it being ling since they look the same... also amazing
So if you hop on those offshore trips and and find yourself a few good size muppets don't be hesitant to try a few smoked.

fair amount of garlic with the basic brine to start off then you can do your own thing if you want!! Apple cherry or hickory! I like cherry !!
