I found this recipe online and made it. It came out really good. Recipe calls for haddock but any white flaky fish will work.

I was a microwave fish skeptic but now i am a believer.

Spending hours labouring over a sauce or a stew can be a soul-satisfying adventure. When you sit down, you can taste the layers of flavours and patience that went into making the dish.

However, there are many nights when I want to prepare a quick and easy recipe that contains simple ingredients and is nutritious.

With a pot of rice and some steamed vegetables, this Microwave Fish with Chinese Flavours is one of my in-a-pinch dinner favourites.

I try to keep individually frozen pieces of haddock or halibut on hand specifically for this dish. I can take them out of the freezer and place them in the refrigerator to thaw in the morning before I rush off to work. I also keep pieces of peeled fresh ginger in my freezer so that I have them ready to use in such a dish.

Cooking fish in cabbage leaves is a perfect way to keep the moisture in and add a slight note of flavour to the finished product. The perfect cabbage for this recipe is either Napa or Savoy. Their delicately flavoured crisp leaves provide a pleasant change from regular green cabbage.

If you are looking for a quick fish recipe to add to your repertoire, I can guarantee that this recipe is a keeper. With only the garlic, cabbage and green onions needing to be fresh, everything else can be found in your cupboard, refrigerator or freezer.

Microwaves are very forgiving when preparing fish and they are also a great appliance for the novice cook. The clean flavours in this recipe and its simplicity will have you hooked.

Microwave Fish with Chinese Flavours

2 tbsp (25 mL) soy sauce

1 tsp (5 mL) sesame oil

1 tsp (5 mL) sugar

1/2 cup (125 mL) diagonally sliced green onions

2 cloves garlic, thinly sliced

2 slices peeled fresh ginger, 1/8 inch (3 mm) thick, julienned

Napa cabbage leaves

1 lb (500 g) haddock fillets or other firm-fleshed white fish fillets

Whisk together soy sauce, sesame oil and sugar until blended. Stir in green onions, garlic and ginger; set aside.

Line a shallow microwave-safe baking dish with cabbage leaves. Place haddock fillets on top of cabbage leaves. Pour soy sauce mixture evenly over haddock fillets. Cover haddock fillets with cabbage leaves.

Microwave, uncovered, on high (full power), checking occasionally, until fish flakes easily with a fork, about 8 to 10 minutes.

Remove and discard top cabbage leaves. Serve immediately. Serves four.

Cook's note: Napa cabbage is also known as Chinese or Peking cabbage. Its delicately flavoured crisp leaves provide a pleasant change from regular green cabbage.
